Parmesan + Sage Chicken Meatballs

WHAT:

  • 1/2 cup bread crumbs

  • 1 shallot

  • 4 cloves garlic, minced

  • 1 tsp dried garlic

  • 1/4 tsp crushed red pepper

  • 1.5 lb ground chicken

  • 1/4 cup grated Parmesan

  • 2 TBLS chopped fresh sage

  • 2 TBLS chopped fresh parsley

  • 1/2 tsp sea salt

HOW:

  1. Preheat oven to 450*F

  2. Chop the shallot and cook it in butter, then add minced garlic.

  3. Combine the ground chicken, Parmesan, sage, parsley, salt, bread crumbs, and shallot mixture in a bowl. Mix until incorporated.

  4. Form the mixture into about 12 meatballs.

  5. Place the meatballs onto a prepared sheet pan and bake on the top rack of the oven for 25-30 minutes, or until golden and cooked through.
