Apple Cinnamon Pumpkin Muffins

WHAT:

  • 1.5 cups flour

  • 1/2 cup sugar

  • 1.5 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1/4 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/2 can pumpkin purée

  • 1 egg

  • 1 TBLS vanilla

  • 1/4 cup butter, melted

  • 1 peeled apple, chopped

Crumble Topping:

  • 2 TBLS chilled butter

  • 2 TBLS brown sugar

  • 1/4 cup flour

HOW:

  1. Preheat oven to 375*F

  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and spices.

  3. In another bowl, beat together the pumpkin purée with the eggs and vanilla.

  4. Add the wet ingredients to the dry, alternating with splashes of butter. The batter will be very thick, this is normal!

  5. Fold in the apples and portion into 6 muffin tins.

  6. To make the crumble topping, use your hands to work the chilled butter in the brown sugar and flour. Sprinkle this on top of the muffins.

  7. Bake for 30-35 minutes or until you can insert a toothpick and it comes out clean.
